Stir-fried rice noodles with chicken. Kuay Teow Kua Gai. ก๋วยเตี๋ยวคั่วไก่.


Another one of my favorite Thai noodle dish. Very easy to make.

Ingredients – add garlic if you like, and use green onion instead of cilantro. I like cilantro better so I use cilantro instead of green onion.


Heat pan – oil, garlic, chicken, oyster sauce, and pepper. just enough to give chicken some flavor while its cooking.


Add eggs – how many is up to you


Wide rice noodle comes in a plastic bag (can be bought at Asian market) Stick them in microwave for 2-3 minutes depending on how cold it is or if its frozen. Use your cooking judgement.  Then cut them into smaller square and break it apart so it is as seen in picture below.


Add noodle to chicken and eggs, add some mushroom soy sauce, then cilantro or green onion



Garnish with lettuce (any kind you like), and the chili sauce – siracha.
