This recipe is a result of us buying groceries that we can keep for two weeks or more. I adapted it from one of Pillsbury recipes, made a smaller portion and everyone loved it!

You will need:
- 1 can Pillsbury Sweet Hawaiian Flaky Layers, we only use 5 biscuits in this recipe
- 2 tbsp butter, melted
- 1/4 cup grated Parmesan cheese
- 1 cup bacon, chopped
- 6 eggs
- 1/4 cup Mozzarella cheese, shredded
- 8″ square glass pan

Make it:

Heat over 350 degrees.
5 Biscuits
(If you have bigger pan, you can use all 8 with this recipe)
Cut each into sixths. 2 tbsp butter, melted.
Drizzle butter on biscuit in pan.
Add Parmesan cheese and use spatula to mix an make sure to coat biscuits pieces evenly.
Chop bacon to small pieces.
Mix bacon into the pan.Arrange biscuit pieces in single layer.
Bake for 12-15 minutes (for both 5 or 8 biscuits).
Remove from oven. Use back of spoon to make wells in biscuits.
Add eggs.
Bake for 10-15 minutes, until eggs are cooked sunny side up and biscuits are brown.
Remove from oven. Sprinkle cheese, and put back in oven for 2-5 minutes.
Cut and serve with fruits and tomato slices.
Notes:
- You can still use the same recipe with 8 biscuits in a 13×9 pan.
- Make sure to grease it as needed.
- I didn’t make big “wells” as we didn’t have much room.
- Crush the biscuits down to make the wells will make it look much prettier and easier to scoop and serve.
